Superfoods are NOT a new idea. They include some of the oldest living plants on the planet.  They have been used for thousands of years by indigenous people all over the world. Their pharmacological attributes have long been revered by ancient civilizations–and only some of us are beginning to experience the magic and medicine held within them.

I began taking Bright Earth Chlorella  when I found out how very good they are for gum health when I had a gum graft about 10 years ago.

Superfoods are getting the attention of the medical community as their health benefits continue to be proven by research. More and more people are experiencing the extraordinary benefits of these highly specialized, delicious, organic, whole foods. Superfoods are an excellent way to give your body very high quality, high density nutrition, for building a strong foundation for a healthy immune system. They are naturally loaded with micronutrients–which continue to be diminished by our modern farming techniques: poor water quality, soil depletion, chemicals, and GMO contamination.

Bright Earth Products have a variety of super fun raw superfoods to eat and cook with. I trust the company because they provide the very best available.  They carry Himalayan Pink Crystal sea salt, coconut sugar, smoothie mixes and body care products.

Teff – Ancient Whole Grain

Teff – is the newest of the new/ancient grains.  Originally a staple food of Ethiopia, teff is now grown in Idaho.  Only 1/150th the size of wheat.  It is a concentrated powerhouse of nutrients.

Teff is relatively inexpensive and snap to make.

Teff

Bring 3 cups of water and a pinch of sea salt to a boil. Add 1 cup of teff, cover, and simmer 15-20 minutes or until water is absorbed. Stir occasionally toward the end of cooking time.Serve with  sprinkled with chopped walnuts, almonds, pumpkin seeds or sunflower seeds.

I love it for breakfast! The first time I ate it was in the morning on an empty stomach.  I felt an inner calm, strength and endurance that I related the feeling to the teff breakfast.

Available NOW in Ivory Teff with a milder taste or Brown Teff with a more robust flavor.  It is high in calcium, iron, potassium, phosphorus, zinc, and all the B-vitamins (except B12).  Teff is also high in protein, containing all 8 amino acids essential for human growth and development.

Corn and Squash Miso Soup

Corn and Squash Miso Soup

one of my favorite quick soups recipes

Summer Squash Soup

2 t olive oil
1 onion, chopped
2 garlic cloves, minced
1 six-inch strip of wakame sea vegetable
3 C water or soup stock
3 C buttercup or any winter squash, skinned and cubed
1 celery stick, sliced
1 C corn (fresh or frozen)
4 T rice miso (light colored)
Celery leaves or parsley for garnish

Heat oil in a heavy stainless soup pot. Sauté the onions and garlic until the onions are translucent. Add the water, squash and celery to the pot. Use a pair of scissors to cut the wakame once along its length, then hold over the pot and continue cutting very thinly across the width so the pieces fall into the pot. Bring to a boil and cook on a medium flame for 10 minutes. Add the corn and simmer for 5 minutes longer. Blend the miso in 1/3 cup broth, then add to the soup. Cook 1 minute longer. Serve and garnish each bowl of soup individually.

The light colored miso paste are most delicious!  You can make miso soup a different way every day of the year. Let your imagination and the seasons be your guide.
