  1. First off start with fresh organic beets! Then bring to a boil and simmer for 20 minutes. Peel, cut and toss in good quality olive oil, balsamic vinegar, sea salt and pepper. Put on a cookie sheet and roast at 375 degrees for 15 minutes. Let me know how they taste!
